IDENTIFICATION, SELECTION AND RECOVERY OF CACAO IN CUSCO

Protecting our genetic biodiversity and promoting the recovery of promising cacao trees in the Cusco region

APPCACAO, in coordination with organizations and institutions in the region, has been identifying, selecting and recovering the best cacao, for the installation of a clonal garden.

To date, 200 promising trees from a total of 30 producers have been identified. They are cacao plants with an age over 40 years and with high productive potential as well as exceptional sensory attributes.

The work begins with the geo-referencing of the farms as well as of each tree identified, followed by the evaluation of the agronomic characteristics (structure, health and productivity). Subsequently, the evaluation of the morphological characteristics of the fruit and cacao beans (color, shape, weight, size and others) is carried out.

For the evaluation of quality, fresh fruit is tasted. The fruits harvested from each tree are subjected to a process of micro-fermentation and slow drying (until they reach 7% humidity). The tasting of 100% cacao paste or licor is performed to determine the sensory profile of each selected tree.

At the same time, two hectares of cacao have been installed under agroforestry systems (SAF) in the Kiteni area and grafting is planned to start in May 2019.
